Cured bricks still have water in them, and that can cause problems. I also stumbled upon some posts where people used normal firebricks or even chimney bricks, and they seemed to work fine. But I decided to go with proper firebricks because, well, I wanted to do it right.

So, I went to a local store, and to be honest, I felt a bit lost. I saw lots of different kinds of bricks, but finally, I found some firebricks. They were a bit pricey, but I figured it’s an investment. I bought enough to build a small oven. While I was at the store, I also got a pizza stone. I mean, I’ve made pizza on a stone in my regular oven before, and it turns out pretty good, so I thought it would be useful here too.

Building the oven was an adventure. I won’t lie; it took some trial and error. I stacked the bricks, trying to make a decent enclosure. I left some space for airflow and a little chimney for the smoke. It wasn’t perfect, but it looked like it would do the job. I even thought about those metal pizza ovens you can buy, but they didn’t seem as fun or authentic as building one myself.

Next up was the dough. I’ve made pizza dough a few times before, so I had a basic recipe in mind. I mixed the flour, water, yeast, and a bit of salt. Then I kneaded it like crazy until it was smooth and elastic. I let it rise for a couple of hours until it doubled in size. While the dough was rising, I prepared the toppings. I’m a simple guy, so I went with some tomato sauce, mozzarella cheese, and some pepperoni.

Once the dough was ready, I fired up the oven. I used some wood to get it going, and man, it got hot really fast! I placed the pizza stone inside to heat up. When everything seemed hot enough, I stretched out the dough, put it on the stone, and added my toppings. Then, carefully, I slid the pizza into the oven.

It cooked super fast! I kept a close eye on it, and in just a few minutes, the crust started to get that beautiful golden color. The cheese was bubbling, and the pepperoni looked perfect. I pulled it out, and it smelled amazing.

The first bite was incredible. The crust was so crispy, and the flavor from the wood fire was just something else. It was definitely different from any pizza I’ve made in my regular oven or even ordered from a restaurant. Was it as good as those fancy, expensive ovens? Probably not, but it was delicious, and the experience of building and cooking in my own brick oven was totally worth it.

In the end, this whole firebrick pizza project was a blast. It was a bit of work, but the result was fantastic. I definitely recommend giving it a try if you’re into DIY stuff and love a good, crispy pizza. I learned a lot, had fun, and got to enjoy some amazing pizza. What more could you ask for?
