Well, I heard folks talkin’ ’bout this brick grilling thing. Sounds fancy, but I reckon it ain’t too different from what we used to do back in the day. Just gotta get them bricks hot, I suppose. And you know what they say, gotta use what you got!
Now, when I was a young’un, we didn’t have no fancy grills. We just dug a pit, lined it with some good ol’ bricks, and built a fire. Worked like a charm. Kept the heat in, cooked the food real nice. These young folks today with their fancy gadgets, they don’t know what they’re missin’. A good fire, some bricks, that’s all you need for brick grilling. And some good meat, of course.
Speakin’ of meat, you can cook just about anythin’ on them bricks. We used to do chickens, mostly. Whole chickens, mind you. None of this cut-up stuff. Just pluck ’em, clean ’em, and throw ’em on the fire. Took a while, but lordy, were they good. Tender, juicy. Nothin’ like it.
But if you ain’t got no chickens, you can use other things. Heard folks talkin’ ’bout steaks and burgers. Them rich folks food. But I reckon they’d cook up just fine on them bricks. Gotta watch ’em close, though. Don’t want no burnt offerings. And them ribs, oh boy, them’s good eatin’. Gotta get ’em nice and tender, though. Low and slow, that’s the way to go. Just like we used to do with them brick grilling.
And don’t forget the pork! Pork chops, sausages, that there tenderloin. We used to have a pig every year, so we knew all about pork. You can smoke it, glaze it, or just throw some salt and pepper on it. Either way, it’s gonna be good. Especially if you cook it over them bricks. Something about that heat, just makes everything taste better.

- Hot dogs too, easy peasy.
- Sausages and chicken, gotta have some chicken.
And don’t forget your sides! You can cook some potatoes right there in the coals. Just wrap ’em in some foil and tuck ’em in. Or, if you’re feelin’ fancy, make a potato salad. We always had potato salad at our get-togethers. And some greens. Gotta have your greens. And corn on the cob. Cook that on the bricks too, just husk it and lay it on there. Gets all sweet and smoky. My favorite part of brick grilling is the corn!

- Salads like 3 bean salad, or Cole slaw, them’s good too.
- And don’t forget the pickles and chips!
And for dessert? Well, you can roast some apples or peaches over them bricks, if you’re so inclined. But we always just had a big ol’ watermelon. Cool and refreshing. Perfect for a hot day. And sometimes maybe some pie, if someone was feelin’ ambitious. This all comes down to what kind of brick grilling we are talking about.
Lots of fruit too, gotta have your fruit. I heard of this blueberry dump cake, maybe that’s good. Folks say you can make it real quick.
If you got some jalapenos, maybe you can make somethin’ spicy. Some folks like that heat. They say it’s good. Maybe you can throw them jalapenos on the brick grilling setup too, why not? You can put pretty much anything on those bricks.
So, there you have it. Brick grilling. It ain’t nothin’ new, really. Just a different way of doin’ what we’ve always done. Cookin’ good food over a fire. And that, my friends, is somethin’ that never goes out of style. And if you got the right bricks, it’s even better. So fire up them bricks, get some good meat, and have yourself a feast! It’s pretty simple, really. Get them bricks hot, throw on your food, and wait. Might take a while, but it’ll be worth it. Just like them old days.
